When it comes to winemaking, you basically have two different options. Either you ferment the juice of the fruit or you decide on the so-called mash fermentation.

If you decide to use juice fermentation, you must first press the grapes with a juicer after washing. The grape juice obtained in this way is then used for fermentation.

If, on the other hand, you want to use mash fermentation to make your own wine, you have to crush the whole fruit. You get a tough fruit pulp that contains the skin and the seeds of the pigeons in addition to the pulp and the juice.

Wine made from juice is lighter and less aromatic than wine made from mash. This is due to the fact that many of the ingredients in the pulp are not released directly when the juice is pressed, but only during the course of the mash fermentation. Juice fermentation is used in the production of white wine, while red wine is produced using mash fermentation.

If you want to make your own red wine, you have to rely on mash fermentation. This is the only way to extract the flavors that are so important for the typical aroma of red wine from the fruit.

What role does grape color play in winemaking?

Do you need sugar to make wine?

Baker's yeast from the supermarket, on the other hand, is not suitable for wine fermentation and will therefore not give you the desired result.

Pour the mash into the fermentation tank

Once your mash has been prepared, you must now pour it into a fermentation tank and be patient. Finally, on the third day, fermentation begins. Keep in mind that the volume of the content in the container can almost double due to fermentation. For this reason, you should only ever fill the fermenter halfway.

Apart from that, it is important that the container is equipped with a special fermentation lock. This ensures that the carbonic acid formed during the fermentation of the wine can escape, while at the same time the contents are protected from the ingress of oxygen.

What temperature for wine fermentation?

For the success of your homemade wine, it is important, among other things, to pay attention to the correct fermentation temperature. Ideally, this should be in a range between 18 and 20 degrees Celsius.

Depending on the space available, storage during fermentation can be in the cellar, in a pantry or in a storage room.

How long does the fermentation of wine take?

The fermentation of the wine takes some time. It lasts between two and three weeks for white wine and between four days and a month for red wine, depending on the variety. Last but not least, the temperature also plays a role in the fermentation time. If you want to try your hand at making wine privately, for red wine it is usually sufficient to let the mash ferment for about a week.

Wine racking time

At the end of the fermentation, the wine has to be sulphurized and then stored in the fermentation tank for another three to four weeks. After this time, to remove the deposits that have accumulated on the bottom of the tank, it is transferred to another fermentation tank.

In this, the wine is stored again for about four weeks before a second wine racking can be carried out and deposits can be removed again.

Bottle the finished wine

Finally, you only have to bottle the finished wine from your own production. You should add potassium sorbate before bottling in order to kill the yeast that is still present in the wine and thus prevent secondary fermentation in the bottles. Also, make sure the bottles are dry and really clean.

It is best to use classic wine corks to close the wine bottles. If you have bought the right set for making wine yourself, these are often already included in the scope of delivery, so you do not have to buy them separately.

How long does wine from your own production have to be stored?

As you as a wine connoisseur know for sure, a fine wine needs a while to mature and develop its full aroma. That doesn't mean that you can't drink your wine directly after fermentation. However, you should not expect a special taste experience in this case.

It therefore makes sense to store it for at least three or four weeks after fermentation and to carry out a first racking. Whether you prefer longer storage and several rackings is entirely up to you if you want to make your own wine.

As is generally known, grapes are used in the production of wine. However, grapes are far from the only option you can resort to if you're keen on making your own wine.

Possible alternatives are, for example, strawberries or cherries, which can also be used to make a tasty fruit wine yourself.
